The Restaurant

Fine dining in an idyllic setting within one of the most stunning country house hotels in Sussex. Ghyll Manor offers a truly charming dining experience... 

Residents and non-residents are welcome to dine in the restaurant at breakfast, lunch or dinner; and the manor is also the perfect place to a enjoy morning coffee, legendary Sunday lunch or a pretty impressive (if we do say so ourselves) afternoon cream tea. Our dishes are updated according to the season and what's fresh that day, but you can find an example here.

So come and enjoy the relaxing and warm ambience of our
lovely restaurant where you’ll be tempted by a variety of delicious
dishes, all beautifully presented with carefully selected ingredients
and complimentary flavours.

Why not relax with a pre-dinner drink in the contemporary bar,
or if the sun is shining, on the terrace overlooking the beautiful
gardens – Pimms anyone? Then, after your visit, you’ll be able
to set your own pace – curl up in the cosy library lounge, or
simply explore.

The restaurant offers a quintessentially British menu with Afternoon teadaily
specials incorporating the best locally available produce.
Inspiration is taken from the flavours of the season, and a clear
philosophy to concentrate on excellent quality and simple
ingredients, giving a twist to some classic dishes. Delights 
you may find on the menu include crayfish and prawn saffron 
risotto, braised pork cheek, and a wonderful chicken liver pate
with a delicious home-made plum chutney.

Adam Salter, General Manager says, “We have always strived to deliver  to our guests simple, beautifully presented dishes, allowing  the quality of the ingredients to really speak for themselves. Seasonal, fresh flavours are for us, what great food is all about.”

 

The restaurant itself is open daily for lunch and dinner where you can choose from menus that offer traditional classics served with a contemporary twist. Bookings are recommended.

Private Dining in West Sussex

Starter

Ghyll Manor Hotel & Restaurant is the perfect venue for private dining whatever your occasion, with period features throughout, fabulous gardens, mouth-watering food and attentive, professional staff - it’s the ideal setting for you to enjoy a truly memorable celebration.

You can choose from three different locations for your celebration to suit your personal taste (and guest list length!).

  • Terrace Room - up to 65 guests
  • Hunsdon Hall - up to 120 guests
  • Summer House - up to 130 guests

Sample menus include:

  • Canapés such as beef and horseradish profiteroles; cherry tomato and mozzarella skewers; chicken liver parfait with grapes and chutney
  • Starters include, seasonal melon with orange sorbet and fruit coulis; ham hock terrine with celeriac salad and honey and raisin dressing; salad of crayfish tails and avocado with chilli and crème fraîche
  • Main courses such as oven roasted chicken with butter fondant potato, seasonal vegetables and lemon and thyme cream sauce; rosemary roast rack of lamb with Delmonico potatoes, French beans with thyme and tomato jus; gnocchi with ginger scented stir fry and a lemon cream
  • Desserts include, summer berry pudding with cassis and clotted cream; rich chocolate tart with crème fraiche and a berry coulis; vanilla crème brulée

Graham Digweed, Head Chef at Ghyll Manor started his career as a kitchen porter at just 19 years old. Since then, the Manchester born chef has honed his cookery skills in four and five-star hotels around London – most notably The Waldorf Hilton and Lanesborough.


Like many chefs, Graham’s influences come from far and wide. He became a fan of fusion food - noting Asian cuisine as a particular favoruite - and also names the likes of Heston Blumenthal and Marco Pierre White as inspiration.


Since joining us at the end of 2013, Graham has brought his own version of British modern to Ghyll Manor, saying ‘we’re going to offer simple, honest food; with more of a rustic feel…it needs to be all things to all people.’
